Fireside Pies – Dallas, TX

Following the mass “Taco Rush” in the Big D, upscale pizza is a trendsetter in the Dallas dining world.  Leading the way in expansion is Fireside Pies.  Originally opened off Henderson as a Tristan Simon staple, they have since opened four more locations including a Plano outpost.  On a cool Spring evening, the porch at Fireside Plano called to us.

Texas Bibb Salad

Pizza being the calling card at Fireside, some may overlook salad choices.  DON’T OVERLOOK THE SALADS.  Their salad options all include fresh greens with a variety of fresh dressings.  We opted for the Texas Bibb salad.  Dressed with a Shallot Red Wine Vinaigrette, the salad featured Bibb Lettuce with Avocado, Cherry Tomato, Mont Chevre Goat Cheese, Hearts of Palm, and Nueske’s Bacon.  This salad was fabulous.  Large enough for two people to split, the soft cheese and avocado combination gave way to a crunchy bacon and lettuce one-two punch.  The Shallot Red Wine Vinaigrette is divine.

Homemade Meatball, Roasted Onion, and Roasted Peppers

Upon getting the roughage out-of-the-way, its time for pie.  Featuring 11 different pizza options, Fireside has a pie for all cravings and tastes.  Sure you can get a staple like Pepperoni or Margarita Pizza.  But Fireside takes even these savory slices to new heights.  Their Pepperoni features hand-made mozzarella, hand torn basil, and a shot of truffle oil.  The “Light n’ Crispy” is topped by a fresh tomato ragu, hand-made mozzarella, marinated tomato, sea salt, and hand torn basil.

Our Molten Meatball pizza hit all the right notes.  Topped with homemade meatballs, roasted red onion, and roasted red peppers, the pizza hit the spot.  Deeply flavorful meatballs sit proudly on top of the onions and peppers.  Not to be confused with a typical meatball sandwich, this upgraded pizza version shows slight sophistication that makes Fireside Pies a pizza favorite.  Those meaty meatballs are not overly dense yet filling.  The carefully caramelized onions and peppers round out the flavor of the meaty orbs.

You can also find the “not so ordinary” pies at Fireside.  Options include Texas Beef Sausage, Balsamic Roasted Chicken, or Housemade Chicken Sausage.  All sound adventurous and must be discovered on future visits.  With new pizza joints opening all over town (Cane Russo, Dough, and Campania), Fireside certainly commands attention from pie lovers all over town.
